Islands in the Cream (taken from Bord Glas
Fruit Recipe Series)
Equipment :
Ingredients:
- 2 meringues about 5cm (2”) diameter
- 250g (9oz) hulled strawberries – keep two for decoration
- 3 scoops of vanilla ice cream
- 100ml (3 fl. oz.) milk
Method:
- Blend together one of the meringues, the strawberries and
milk. Then add the ice-cream and blend for another few
seconds.
To thicken add more ice-cream or to make it thinner, some
more milk.
Serve in two glasses. Crush the remaining meringue lightly
and sprinkle on top.
Seamus O’Connell’s Recipe.
Apologies to all of you who are waiting patiently for the recipe
for the white-forest gateau which Seamus made on our farm last
summer. When last speaking with Seamus, he was unable to recall
the exact quantities of ingredients required, and said that he
was going to make another to refresh his own memory. This he
would have to do anyway he said, as he was going to include the
recipe in his forthcoming book. I will be keeping in contact
with Seamus, and will try to have the recipe in as soon as he
has down on paper. Otherwise, I will just have to buy his book
when it comes out, and let you know the recipe after that.
